5 Easy Recipes For Winter Camping

Winter is coming…bring on the easy camping meals! The days are colder and shorter—because of this, your motivation for cooking is probably short too. A perfect solution is having easy meals that can be pulled from the freezer and reheated, or thrown in the Crock-Pot or Instant Pot.

I’ve scoured the internet for you and found a collection of 5 super easy winter camping meals that will warm you and your family this winter RV season. Save them so you always have a quick recipe ready to go!

1. Spicy Italian Sausage & Potato Soup

Liz Blaser of Liz Camps has created a perfect winter soup. This recipe is perfect to make in bulk and freeze for an easy weekday meal. It can also be customized to make it lighter with chicken sausage, or dairy-free with plant milk. More fiber? Toss a handful of lentils in to make it even heartier.

This soup is also super easy to make. Simply brown the sausage and caramelize the onions in a pan (or Instant Pot or Crock-Pot). Then dump everything (excluding the kale and milk) into the mix. Cook until the potatoes are soft then add the kale and milk. Get the full recipe from Liz Camps.

2. Ground Turkey Mac & Cheese

This easy camping meal is made in ONE pot! How perfect. Jasmine (@JazzyThings) from Your Dinner Is Planned is one of my favorite influencers on Instagram. I have followed her for years and she has some amazing recipes.

Her one pot pasta meal is absolutely perfect for this easy winter camping meal list. This recipe has a super easy ingredients list and you probably have most (if not all) the ingredients already in your pantry and fridge. Just toss it together for a warm winter meal. YUM!

3. Cast Iron Chili & Cheddar Drop Biscuits

This super savory recipe is by the @RVFoodies! They created this recipe in a cast-iron Dutch oven (but I bet you could make this in your Crock-Pot). Plus, this chili recipe leaves room for some easy modifications.

Vegan? Omit the ground meat from the chili or substitute with lentils or tofu. Keto? Omit the beans from the chili and use almond flour in the biscuits.

4. Apple Butter Pork Chops

Oh man, apple and pork chops is one of my favorites! This recipe fits the bill for an easy camping meal too because it is made in one skillet! This apple butter pork chop recipe from Becky over at The Cookie Rookie looks as good as it tastes.

Grab your cast iron skillet and whip up this delicious meal. The apple butter and pork chops add a certain level of sophistication which is perfect for making a weekday feel a little bit special.

Mashed potatoes or roast potatoes would be perfect on the side with this meal. To lighten it up, you could serve roast Brussel sprouts as a side.

5. Lentil and Mushroom Stew over Potato-Parsnip Mash

This last one is a vegetarian dream that might even fool the truest carnivore! This lentil and mushroom stew over potato-parsnip mash is by Jamie from Dishing Out The Health.

If you aren’t familiar with vegetarian cooking, don’t be intimidated. This is an easy weekday dinner that can also be served for a dinner party. But the ingredients are easy and RV kitchen friendly. The recipe calls for brown lentils which cook in about 20-30 minutes. Running short on time? Jamie suggests swapping the dried lentils with canned or pre-cooked ones.

This recipe calls for two pots. But it will be well worth it. The parsnip and potatoes can cook together in the same pot! In a second pan, you cook the stew.
